Vegan & Gluten-Free Breakfast Recipes
Since breakfast is often associated with dishes that are mainly made up of gluten, eggs and dairy, people can find it hard to think of what you might eat if you were gluten-free and vegan. But there are tonnes of yummy things we can eat! Here you'll find my tried and tested recipes for the best vegan and gluten-free breakfasts for a fabulous plant-based start to your day!
Normally during the week my breakfast will be a quick piece of toast with peanut butter or hummus or I whizz up a smoothie to drink at my desk. On colder mornings, we love to have porridge (made with nut or oat milk) or in the summer, a bowl of homemade granola with coconut yoghurt and berries.
When I have more time at the weekends or during the holidays then I like to go to a little more effort. My very favourite is a vegan full English fry-up (scrambled tofu, vegan bacon, baked beans, grilled mushrooms and tomatoes, and wilted spinach).
For a slightly different option, you could fry up some mushrooms with garlic and herbs (thyme or parsley would work well) and then stir some cashew cream into the pan. Pour the mixture onto a piece of toast and season well with salt and pepper (or some everything but the bagel seasoning would be heaven!).
