Vegan and Gluten-Free Lunch Recipes
Recipes for healthy vegan and gluten-free lunches including quick weekday lunches at home, lunchboxes for school or work, and ideas for weekend entertaining lunches too!
For quick weekday lunch ideas, I like the following:
- avocado on toast with a squeeze of lime and some sesame seeds;
- sandwich made with chickpea mayo (basically the same ingredients as tuna mayo but with chickpeas instead of tuna. It's amazing how good it is! I also add some seaweed to give that taste of the sea!)
- corncake or gluten-free oatcakes with remaining dips from the weekend's entertaining (there is usually some muhummara in my fridge) and some chopped veggies on the side.
- scrambled tofu on toast or beans on toast.
- hummus with anything!
The recipes linked below are also excellent lunch ideas. Some are perfect quick fixes for when you have no time to leave your desk and others are better for weekends or entertaining.
Lunches are one of our favourite ways to entertain as our friends can come with their kids - the children all happily play together and the parents can actually relax and enjoy ourselves. And there's no babysitting needed! So it's a win-win all round!
