Quick weekday lunch ideas
- something quick and tasty onย toast(or with corncakes or gluten-free oatcakes):
- avocado with a squeeze of lime and some sesame seeds;
- scrambled tofuย with some rocket or spinach;
- baked beans on toast;
- sliced tomatoes drizzled with olive oil and salt and pepper;
- any leftover dipsย from the weekend's entertaining (especiallyย muhummaraย orย sundried tomato and olive tapenadeย ).
- sandwiches or wraps:
- soup;
- quick-fixย salads, especially grain salads like myย quinoa saladandย millet salad;
- noodles orย sushi bowls;
- any re-heated leftovers!
Lunches for Entertaining
Lunches are also one of our favourite ways to entertain as our friends can come with their kids - the children all happily play together and the parents can relax and enjoy ourselves. And there's no babysitting needed! So it's a win-win all round!
- Tarts (try my asparagus and macadamia tart or roasted vegetable tarts);
- Vietnamese pancakes with salad filling;
- Grain salads (try herby quinoa salad or spiced millet salad with pistachios) with flatbreads and some mediterranean roasted red peppers;
- Spiced mung bean stuffed red peppers with garlic cashew cream, served on a simple rocket salad;
- Wild mushroom feuilletees with a side salad.
