Vegan and Gluten-Free Lunch Recipes
Recipes for healthy vegan and gluten-free lunches including quick weekday lunches at home, lunchboxes for school or work, and ideas for weekend entertaining lunches too!
Quick weekday lunch ideas
- something quick and tasty on toast(or with corncakes or gluten-free oatcakes):
>> avocado with a squeeze of lime and some sesame seeds;
>> scrambled tofu with some rocket or spinach;
>> baked beans;
>> sliced tomatoes drizzled with olive oil and salt and pepper;
>> any leftover dips from the weekend's entertaining (especially muhummara or sundried tomato and olive tapenade ).
- sandwiches or wraps:
>> chickpea mayo (basically the same ingredients as tuna mayo but with chickpeas instead of tuna. It's amazing how good it is! I also add some seaweed to give that taste of the sea!);
>> air fried tempeh with rocket and chilli sauce (or a dip);
>> hummus with grated carrot and lettuce;
- soup;
- quick-fix salads, especially grain salads like my quinoa saladand millet salad;
- noodles or sushi bowls;
- any re-heated leftovers!
Lunches for Entertaining
Lunches are also one of our favourite ways to entertain as our friends can come with their kids - the children all happily play together and the parents can relax and enjoy ourselves. And there's no babysitting needed! So it's a win-win all round!
- Tarts (try my asparagus and macadamia tart or roasted vegetable tarts);
- Vietnamese pancakes with salad filling;
- Grain salads (try herby quinoa salad or spiced millet salad with pistachios) with flatbreads and some mediterranean roasted red peppers;
- Spiced mung bean stuffed red peppers with garlic cashew cream, served on a simple rocket salad;
- Wild mushroom feuilletees with a side salad.
