For the kids, I find myself serving steamed, boiled or microwaved carrots and broccoli with nearly every meal because they are the vegetables that all three children like so it makes it really easy. However, for the grown-up meals, I like to include a wide array of vegetables and I often make more than we need so that I can then hide them in the kids food the next day! Use leftovers chopped up really small so they are less detectable by eagle-eyed children and add to stir-fries, risottos, fritters, pasta sauces or whizzed up in soup form!
