This vibrant fresh dip made with creamy avocados spiked with lime juice not only tastes delicious but also helps you to preserve your avocados for longer at their peek ripeness.
Cut the avocados in half and scoop out the flesh from the skins. Cut the avocado into cubes or loosely mash with a fork (it doesn’t need to be super smooth) and mix with the other ingredients.
2 avocados, 2 spring onions, 2 limes, 2 teaspoon fresh coriander leaves, A pinch of Himalayan pink salt, A few grinds of freshly ground black pepper

This guacamole should keep for a couple of days in a sealed container in the fridge. Ideas for how to use your guacamole:
Serve as a dip with nachos or crackers;
