Vegan and Gluten-Free Dinner Recipes
Here you will find recipes for delicious, satisfying vegan and gluten-free main meals for family dinners (or a big lunch).
If you find it hard cooking for your family after you get back from work, my advice is to make it easy for yourself during the week with quick easy meals or re-heating batch-cooked meals from the weekend. At the weekend, make big batches of whatever you cook and then freeze portions for another week.
Quick easy weeknight meals:
- baked beans or scrambled tofu on toast.
- pasta with quick blender sauces (try my spinach pasta and creamy sun-dried tomato pasta, both of which take literally 5 minutes to make in the blender!).
- jacket potatoes cooked in the microwave for 5 mins then in the air fryer for 5 mins to crisp up.
- quick stir fries with noodles (try my thai basil mince stir fry, leaving out the chilli for kids portions).
Batch-cook meals to make at the weekend:
- pasta sauces (try hidden vegetable bolognese sauce);
- stews & chillis (try my hearty vegan stew with smoked tofu and vegetables or adzuki and black bean chilli)
- curries (I have a few of these on the website - try my mung bean curry or pumpkin and green bean curry)
- soups (there are a lot of soups on my website but the spinach and cannellini bean soup is on repeat in our household, as well as the middle eastern lentil soup!).
Just remember, never cook just the amount you need that day - always cook at least double batches and put half in the freezer as a ready-meal for another day. These will be your life savers!
An air fryer can be a great help too:
- quickly make sweet potato or regular potato chips and floured tofu cubes or tempeh pieces.
- cook the veggies straight from the freezer in the air fryer (try my air fried frozen green beans – broccoli or brussel sprouts work well too!) or steam some carrots and broccoli or microwave some peas and sweetcorn to serve on the side. There's always a quick side salad as an option too!

My final bit of advice for dealing with hungry kids - if the meal is taking longer than you’d like and the kids are hangry, give them the vegetables first. Crispy kale is very quick to make in the air fryer. It will keep the kids at bay for a few more minutes while you wait for supper and you'll be happy that the veggie part of the meal has already been covered!
